You can be anything, but not a Non-Latino Latino!

And what is the difference between ethnicity and race???

You can opt to be either Latino or Non-Latino, but then for race, you can
mix and match: perhaps an Asian Latino, Hawaiian Latino, Europena
Non-Latino.

And the, out of curiosity: I know that Brazlians don't like to be
classified as either Hispanics or Latino - so what exactly are they,
especially as the majority has some or other mix of European (mostly
Portuguese) African and Native Indian, though most of them would insist
that they are 'white'. But now that there are quotas for black students to
gain entrance to university, there are plenty who erstwhile were 'white'
who now are enrolling on the basis of their non-white colour/ appearance.
