For those of you who have seen the fake "Chai Tea" of Starbucks, here's
our very own recipe from the streets of India, served by children (Yes,
child labor that everyone wants to get rid but don't know where to put
them). BTW Chai means tea so what the hell is SB trying to do, promote
superfluity.
Boil milk (preferably whole), when it nearly boils over from the pan (you
have to be quick), add crushed ginger root (a mortar and pestle is ideal),
add sugar, and good tea leaves (I happen to be from Darjeeling so I will
insist on that), and add freshly ground cloves, cinnamon sticks, and
cardamom. Strain it out in large mugs and enjoy!
