Why tolerate all the ms crap? Why not use something that's
not a capitalist tool?

It's past time to drop microsoft, and start using Linux.
It is a small effort, legal, free, and secure... unlike ms.
Download puppylinux, 100Mb, burn a cd and boot to
Linux without changing you microsoft $/spymachine at all.

pdftotext does a good job with the right options.
-layout is good.

   -f <int>          : first page to convert
   -l <int>          : last page to convert
   -layout           : maintain original physical layout

   -enc <string>     : output text encoding name
   -eol <string>     : output end-of-line convention (unix, dos, or mac)
   -nopgbrk          : don't insert page breaks between pages
   -opw <string>     : owner password (for encrypted files)
   -upw <string>     : user password (for encrypted files)
   -q                : don't print any messages or errors
   -v                : print copyright and version info
   -h                : print usage information
   -help             : print usage information
   --help            : print usage information
   -?                : print usage information
