Donald Worster is excellent. One point he might have made concerns politics.
Here in arid California, we irrigate land to grow sugar beets near where I
live. In part because the water is subsidized, it is economical to grow the
sugar beets here -- despite the ecological consequences of the irrigation
systems.
In part, sugar beets are economical because the United States excludes sugar
from Cuba and restricts it much of the rest of the world.
